Ginger Pear Lazy Daisy Duff


Pear-Ginger Lazy Daisy Duff approach...


The last of the pears ended up in a delicious Pear Ginger Lazy Daisy Duff this week. The LD Duff recipe came from an apprentice years ago and ended up in the RavenCroft cookbook. Tried and true, the Lazy Daisy Duff is another seed recipe that can be adjusted to incorporate any ripe fruit or berry available. Pears and ginger combine well and were on the counter, so I created a quick gingerbread using the LD Duff recipe.


Lazy Daisy Duff Recipe

Heat oven to 350 degrees

Melt 1/4 cup butter in 8" baking dish. Set aside.

In a small bowl mix:

1 cup flour

1/4 cup sugar

1 tablespoon baking powder

a pinch of salt

(1 tablespoon grated fresh ginger + 1 teaspoon dry ginger)

1/4 teaspoon ground cloves

Quickly stir in 2/3 cup milk (with 1/4 cup molasses), stir into dry ingredients to form batter

Spoon over melted butter in baking dish

Top with 2 cups fruit or berries (diced fresh pears)

DO NOT STIR!

Bake at 350 approximately 35-40 minutes

Serve hot from the oven
